Tofu, Broccoli & Rice Casserole

What do you need when you’re studying 12+ hours a day for 12 days straight?

Frozen Meals!  Another one of Amy’s delightful dishes!

And then I made some meals for the week: 

Tofu, Broccoli and Rice Casserole

  • 1 1/2 cups brown rice
  • 2 cups tomato soup
  • 1 bag frozen broccoli
  • 1 container firm tofu
  • 1/2 cup chopped onions
  • Italian seasoning (~1 tbsp each): basil, oregano, parsley, rosemary, fennel, salt, pepper, garlic
  • 2 cups boiling water

Preheat oven to 350.  Boil the water.  Mix water, tomato soup and seasonings in a bowl (with a pouring lip).  Put rice, chopped tofu, onions and broccoli in a 13×9 inch glass pan.  Pour water/soup mixture over top.  Cover in Tinfoil and Bake for 40-45 minutes (I like to uncover for the last 5-10 minutes to get it crispier.

Voila.  Dinner (for 6 – or 6 meals) is served.

*I will be signing off for the week until Friday – I have prelims on Tuesday/Thursday that require 100% focus this week.  Wish me luck – I can’t believe that Thursday at noon PST this year will finally be over!  Gaaaaaaahhhhhhhhhhh!  Too bad my ‘future’ as a PhD student depends on these TWO tests.  Begin panic attack now…
